Ice Wines are supreme ultra-sweet desert wines. Some of the best known regions that produce ice wines are in Canada, Germany and Austria. These are usually sold in half bottles and are quite expensive for a reason.

The whole making process of ice wine is different from making usual wine and is much more complicated. After the harvest grapes stay on the vine for some time. Grapes are being freezed and thawed naturally resulting in fruits being dehydrated and having concentrated natural sugars and acids. This is why ice wines are so intensive and complex in flavor. Once temperature reaches certain degree, grapes are handpicked usually during night time getting through snow and dealing with frost all for taking the advantage of cold temperature. Then those frozen grapes are crushed in very cold temperature. Just part of the grape's juice is released and fermented because of them being frozen.

All this explains their high price.

Ice wines have a taste of tropical fruits with most known of mango, pineapple, peach and apricot, raisins and honey. These are good not only with chocolate but with fruits and fruit desserts as well as enjoyed on their own.

Riesling (white wine) is considered to be one of the best ice wines. Gewürztraminer is also worth trying.

As for the red wines - Pinot Noir, Cabernet Franc and Merlots are being the most used to experiment.
