Chocolate
and Sherry Wine Pairing
Sherry (Vino de
Jerez) is a fortified with brandy wine, product
of Spain.
It falls under
Protected Designation of Origin law, which means true Sherry
wines come only from the territory so called "Sherry Triangle"
(which is in Cádiz provence) that lies within Jerez de la
Frontera, Sanlúcar de Barrameda and El Puerto de Santa
María.
Name "Sherry"
is used by wine makers from other places as well, but they must
mention this on the label, like "California Sherry" for
example. Sherry is a very versatile wine, from very dry,
light finos made from Palomino grape to liqueurish -like
in texture made from Pedro Ximénez and Moscatel
grapes.
While chocolate
won't do any favor to dry Sherry, Sweet Sherry is
believed to be one of the best picks to white chocolate
varieties. PX (Pedro Ximénez) has a
rich mixure of toffee and raisins flavors. If you pour
some wine over an ice-cream dessert, it will create
sensational flavor and add some new notes to the
taste.
